By now, we can all agree a bevy of businesses popping up during the summer season throughout the Hamptons is the new norm.

And while the majority of them tend to leave as soon as the clock strikes Labor Day, some never to be seen or heard from again, Camp Rubirosa — the East Hampton outpost of the Manhattan-based Italian-American eatery Rubirosa Ristorante, presented by Resy — is breaking the mold and coming back for not only a second year, but for each summer season that follows, returning to the same location it inhabited last year at 31 Race Lane.

“Camp is about coming back,” says co-owner Maria Pappalardo in a press statement from the restaurant. “It’s about that feeling when you walk in and everything feels familiar — the energy, the smells, the music, the food — and yet there’s something new waiting for you. This summer we watched families create real traditions. That’s when we knew this had to become annual.”

The summer of 2025 was a banner debut for Camp Rubirosa, as the restaurant’s food and overall vibe became one of the most in-demand dining experiences on the East End. Blending themes of nostalgic, American camping trip vibes with the rural charm of the Italian countryside, Camp Rubirosa is the just-casual-enough eatery that keeps going out in the Hamptons a fun occasion.

Inhabiting the same space that once housed Hamptons staple The Laundry for over two decades. With a menu chock-a-block full of familiar Italian-American classics, heavily peppered with locally sourced seafood and produce, pizza rests at the heart of it, particularly their signature Tie-Dye pizza: a super thin-crust pie with a distinct mix of vodka and tomato sauces, dollops of fresh mozzarella and a pesto swirl. Additionally, a slew of entree and handmade pasta portions are available in individual or family style format, perfect for feeding a hungry crowd.

“The best camps are the ones you go back to every year,” Rubirosa co-owner Brian Bedol says. “You know the songs. You know the traditions. But every summer adds new stories. That’s what we’re building here — something that feels timeless but never static. In a world over-run with technology, friendly, in-person experiences are more important than ever.”
