Saylor Beach House (111 Main St., Greenport, 631-477-0627) is the newest addition to Greenport’s waterfront dining scene, inspired by a multi decade-long friendship between music icon Taylor Dayne and hospitality guru Celeste Fierro. And the duo have built a bridge (in the form of a boat collaboration with Yacht Hampton) to bring Sag Harbor residents and visitors to check it out.

South Forkers can visit from across the bay, with boats departing from Yacht Hampton’s Boating Club & Marina in Sag Harbor between noon and 4 p.m. Thursday through Sunday all season. Head back on one of the premium vessels at 3 or 4 p.m. for the 40-minute ride with white-glove service aboard. Trips are $75 per person each way, with the option to add on $20 “Happy Saylor” meals with bite-sized portions from the restaurant, a mini cocktail and single souvenir cigarette. 

The pair debuted the Mediterranean-inspired restaurant and bar during a Sunday Funday event on May 17 with a surprise performance of Tina Turner’s “Proud Mary” by Dayne at Claudio’s Waterfront, across the marina. 

A large yellow Adirondack chair greets visitors before they enter through the faux citrus-adorned archway. The deck is covered in chic neutral outdoor couches, wooden furniture, shrubbery and yellow umbrellas, giving it an Italian beach club feel.  

“To me, this is the best of Europe and the Hamptons,” says Fierro. “The goal was to make this a little bit of a hidden gem on the North Fork.”

The menu is packed with coastal fare like fried calamari, charred citrus shrimp skewers and 2-pound baked lobsters, plus other grazing options from mezze boards and a raw bar. 

As for sips, cocktails like spritzes, freezes, martinis, margaritas, sangrias and a mix of wines from Long Island and beyond speckle the menu, with tons of sparkling wine options and a long list of draft beers. 

“Longevity, creativity, lounging, social living and how we eat and drink — we combine it all with friendship,” says Dayne. “That’s why we work together and we’re finding bliss in this.”
