Since chef Dewa Wijaya came into Amagansett’s boutique hotel, The Roundtree, it seemed clear that his Bali-borne talents were destined to bigger plates and a broader audience. Starting Monday, May 18, Wijaya will be a the helm of The Roundtree’s foray into fine, healthy dining with Nourish (203 Bridgehampton-Sag Harbor Turnpike, Bridgehampton, 631-600-8852).

“At Nourish, the inspiration begins with the extraordinary ingredients of the East End. The farms, the waters and the people who cultivate them provide a natural foundation for cooking that feels both vibrant and nourishing,” said Wijaya in a statement to the press.

Wijaya arrived at owner Sylvia Wong’s Amagansett-based hotel last July, bringing his brand of healthy, delicious cooking skewed toward locally sourcing to guests of The Roundtree, which is a member of the bespoke Small Luxury Hotels of the World. Immediately, he began to look at the bounty around him, inspired by the nearby farms and fishermen.

With the opening of Nourish, he’s taking this past year of getting to know local purveyors and applying that knowledge and those relationships it into a full-blown, 70-seat restaurant, which also has the capacity for 30 more on the pretty outdoor patio, that’s taking the space that held the Manhattan outpost of Arthur & Sons for the past two season. Sourcing from such places as Amber Waves, Acabonac Farm, Balsam Farm, Gosman’s and other nearby spots, Wijiwa is committed to making dishes like sushi bites, crab and corn cakes, salt-baked branzino, all the way down to his housemade kombucha, fresh and inspired.

At the 20-seat bar, too, expect seasonally inspired cocktails, mocktails and other zero-proof options.

Nourish at 203 Bridgehampton-Sag Harbor Turnpike will be open for dinner nightly with lunch on Saturday and Sunday in May, June and September. In July and August, lunch and dinner are daily.
