It’s great when good things collide.
Mermaid Gin teamed up with God’s Love We Deliver, the organization bolstering the health and well-being of individual suffering with debilitating illness, this month in East Hampton to help raise funds for the organization and spread the word about the Isle of Wight-made spirit with a great story of its own.
With a mission toward sustainability and local sourcing, founders Xavier Baker and Conrad Cauntlett launched their B-Corp distillery off the coast of mainland England in 2014. One of things they found was juniper, once abundant on the island, was nearly decimated and they used their spirited launch as the impetus to bring it back, partnering with botanists to rebuild the plant’s population.
With their eye toward environmental stewardship (and delicious final product) the gin caught the eye of “Midsummer Night’s Drinks” hosts Neal Patrick Harris and David Burkta, who for the July 11 fête benefitting God’s Love, used Mermaid in their very own version of the Tom Collins from their cocktail book Both Sides of the Glass: Cocktail and Mocktails to Toast Any Taste.

Neil and David’s Tom Collins
Ingredients
- 1 1/2 oz Mermaid Zest Gin
- 1 oz fresh lemon juice
- 1/2 oz simple syrup
- 3 oz club soda
- 1 fresh cherry
- 1 lemon slice
Directions
- In a shaker with ice, combine the gin, lemon juice and simple syrup. Shake until well-chilled and frothy, about 10 to 15 seconds.
- Strain into an ice-filled goblet or Collins glass.
- Top with club soda and garnish with the cherry and lemon slice. Cheers!
