There’s a new bagel in town, Westhampton, and it’s not as fleeting as it sounds.

PopUp Bagels is opening their new house-made bagel bonanza at 130 Main Street in Westhampton Beach on Friday, June 12 — but don’t let the name fool you. They’re here to stay.

Founded in Westport, Conn., by Adam Goldberg (no, he’s not related to the Goldberg’s Bagels down the street or anywhere else on the Forks), the project started as a Covid-19 pandemic hobby that morphed into a career pivot and, now, hundreds of stores nationally, from here to California.

Goldberg’s trademark — a less dense, softer, rip-and-dunk style of bagel — started as a series of popups around New York City, and became so wildly popular, he saw room for a reimagined, but no less delicious, style of bagel (and a way to bring decent bagels to towns that have none).

With literal pop-ups in Amagansett over the last few years, the Westhampton Beach location represents a permanent brick-and-mortar for the once-traveling bagel making maestro for the Hamptons.

If you can make it to the grand opening, be sure to get in on their limited edition chocolate chip cookie schmear, a collaboration with Hamptons’ own Tate’s Bake Shop.

Otherwise, the ethos at PopUp Bagels is to keep it simple with five basic bagel flavors (plain, everything, poppy seed, salt and sesame), plain and scallion cream cheese options plus a couple of rotating weekly special spreads, salted butter, and smoked salmon, as well as coffee from La Colombe and Natalie’s juices. Bagels can be pre-ordered online by the dozen — or you can just stroll on into the new Westhampton spot for your fresh pick.
