Wellness is often described as the state of being in good health, particularly when the individual is actively pursuing it as a goal. More often than not, that pursuit must require an extensive knowledge and understanding of food, and even better when they can make it beautiful, fun and engaging.

Shou Sugi Ban House (337 Montauk Highway, Water Mill, 631-500-9049), a 13-room (blink and you’ll miss it) luxury wellness hotel that’s tucked away on three acres just off Route 27, next to the Parrish Art Museum, is dedicating half a dozen of the upcoming summer weekends to showcase the pursuit, and the power, of good food for guests, both those staying with the at the hotel and those not. And it all starts tonight at 7:30 p.m.

Dubbed The Chef’s Table series, the Water Mill-based wellness hotel will host multi-course tasting experiences featuring menus concocted from some of the most esteemed culinary hands from around the world to not only offer diners a specially curated experience, but to remind them to “celebrate the beauty of the ingredients and the power of intentional dining and connection,” according to a statement from Shou Sugi Ban House.

The series will feature six chefs serving about two dozen people or so in an intimate setting on select weekends throughout July and August.

Tonight, the series begins with Camila Rinaldi, a Brazilian-born chef based in New York City, known and beloved for her joyful, sustainable approach to cooking, with a creative, simple yet conscious focus on the #zerowaste movement. Her work celebrates the kitchen as a space for connection, care, and of course, nourishment.

“In a world saturated with fast food and convenience, I strive for a paradigm shift,” Rinaldi writes on her website. “More cooking, less ordering. More emphasis on freshness, less reliance on processed meals. This is the world I envision—a world where the kitchen becomes a sanctuary of creativity, nourishment, and sustainability.”

Other chefs slated to appear in the series are Tara Khattar, Fox Schanzer, Greg Brown and Abby Kirn. A tasting menu from Mads Refslund will also be featured, with his dinner uniquely set for a week day (Thursday, July 24).

“We’re excited to be launching this series with these chefs, our freshman class of Chef’s Table,” says Taylor Berry, executive director of the wellness hotel. According to Berry, each dinner will cost about $265 per person.
