The latest cider project from Roman Roth of Wölffer Estate Vineyard is another dive into his own father’s specialty: cider. But the ever-creative Roth took created an intriguing twist on the category to make Oishii (which translates to mean “delicious”), his recently released cider using sake yeast from Brooklyn Kura, New York’s only sake producer, and apples from Halsey Farm to create a fruity, floral lovely expression of cider, not unlike the delicate ginjo-style sake aromatics from which the yeast is drawn.

We were inspired by those beautiful elements to create of riff on the classic Sidecar cocktail, only here we up the ante with our favorite New York brandy maker, Neversink, triple sec (by all means, get yourself a high-quality version; it makes a big difference), and a little dash of cardamom bitters.

Wölffer Oishii Orchard Sidecar

Ingredients

  • 2 oz Wölffer Oishii Cider
  • 1 1/2 oz Neversink Pear Brandy
  • 1 oz triple sec (use a high-quality version, like Giffard or Kazuba)
  • 1/2 oz fresh lemon juice
  • 1 dash cardamom bitters
  • 1 slice Granny Smith apple

Directions

  • Add all ingredients to an ice filled shaker.
  • Shake for 15 seconds.
  • Strain into a coupe or Nick & Nora glass. Cheers!
