Method
- In a shaker, combine first four ingredients and shake vigorously without ice to aerate and whip the egg white for 30 seconds.
- Add ice and shake again, 15 to 20 seconds more, or until very cold and frothy.
- Strain into a double rocks glass with ice. Top with a little club soda and garnish with skewered blueberries. Cheers!
Lavender syrup
- Combine equal parts water and sugar (1 cup each is a good place to start) with 2 tablespoons of dried lavender flowers.
- Simmer over medium heat, stirring, until sugar dissolves.
- Strain out the flowers through a fine mesh sieve. Discard the lavender flowers.
- Store in a container or jar with a tight seal for up to one month in the refrigerator.
