Pickled Bluefish from the Montauk Point Lighthouse Cookbook

Ingredients
  

  • 2 1 lb bluefish fillets
  • 2 medium onions (or 1 large Bermuda onion)
Marinade
  • 1/4 cup red wine vinegar
  • 1/2 cup white vinegar
  • 1/4 cup kosher salt
  • 3 tbsp sugar
  • 1 tbsp pickling spice

Method
 

  1. Remove and discard all dark meat from fish fillets and cut fish into bite-size pieces.
  2. Slice onions thinly and layer alternately with fish in a suitable container (glass or plastic) with a lid.
  3. Boil all ingredients for marinade for 3 minutes. Allow to cool.
  4. When marinade is cool, pour over fish and onions, covering completely. Refrigerate for at least 7 days. The pickled fish will keep almost indefinitely in the refrigerator.
