A mix of mighty mushrooms makes for an earthy, irresistible pasta dish

Hen of the Woods mushroom pasta

Ingredients
  

  • 1 lb dried pasta (rigatoni or trumpets)
  • 1/4 - 1/3 cup olive oil
  • 4 - 5 cloves fresh garlic, peeled and chopped
  • 1 bunch Italian parsley leaves, chopped
  • 1 lb assorted mushrooms, cleaned and chopped
  • salt and pepper to taste

Method
 

  1. In a large, shallow pan, heat the olive oil to medium heat. Sauté mushrooms, mixing occasionally, about 8 minutes.
  2. In a large pot, bring water to a rolling boil and season with salt. Cook the pasta until desired doneness according to package directions. Research 1/2 cup of pasta cooking water, and drain the rest.
  3. Add the drained pasta back to the pot and mix in the mushroom medley and the reserved pasta cooking water. Simmer over low heat for a minute, until the water is absorbed and the pasta is glossy.
  4. Serve garnished with the chopped, fresh parsley, grated parmesan and a teaspoon of olive oil. Enjoy!
