El Tacobar's street corn

Ingredients
  

  • 6 ears Long Island corn, each ear cut into three pieces
  • 2 tbsp butter
  • 6 tbsp Mexican crema
  • 6 tbsp grated Cotija cheese
  • 6 tsp Tajin
  • 6 wedges lime

Method
 

  1. Place the corn pieces in a large saucepan filled with salted water and the butter, and bring to a boil. Turn down to a simmer and poach the corn for 3 to 5 minutes, until bright and tender.
  2. Remove the corn from the cooking liquid and roll the pieces in the creme.
  3. Place on a plate and sprinkle generously with Cotija cheese and Tajin. Garnish with the lime wedge.
