Chef Darren Boyle's Tavern burger

Ingredients
  

  • 1 lb beef chuck, ground
  • 1/2 lb beef brisket, ground
  • 1/2 lb beef short rib, ground
  • 1 to 2 tsp Maldon sea salt
  • 4 brioche buns
  • condiments of choice

Method
 

  1. Heat your grill on medium-high heat to 375 to 400°F.
  2. In a bowl, mix together the ground chuck, brisket and short rib until just blended — don't overmix.
  3. Form into 4 equal-sized patties. Salt the top of each.
  4. Cook on the grill, salt-size down for 1 minute. Flip and cook for one minute more. If using cheese, top with a slice as soon as you flip.
  5. Remove from grill and set on a plate for one more minute, allowing the meat to settle and any extra juices to bleed out (this will keep your bun from getting soggy).
  6. Place on split brioche buns and top with condiments and toppings of choice. Enjoy!
